- Peel the carrot and cut it into baton. Trim and slice the mushrooms. Slice the onion into rings.
 - Trim the broccoli and cauliflower into florets and blanch, then drain well.
 - The Batter: Sift the flour and salt into a bowl. Beat in the eggs, then the warm water.
 - Heat the oil in a deep pan. Dip the prepared vegetables into the batter and then cook in the hot oil, in batches, turning once.
 - Drain on kitchen paper and keep warm. Serve hot with a dipping sauce.

- 1 kg mixed vegetables (broccoli, cauliflower, carrot,
 - mushrooms, onion)
 - peanut oil, for deep-frying
 
Batter
- 200 ml warm water
 - 300 grams plain flour
 - Pinch of salt
 - 2 eggs
