Preparation Method :
- Stir in ghee with enough water and all the ingredients except oil, process until the mixture clings together.
- Turn dough onto floured surface; knead until smooth. Cover; refrigerate dough at least for 20-30 minutes.
- Divide dough into four portions; roll out each portion on floured surface to form a rectangle.
- Cut pastry into strips. Twist strips into novelty shapes. Deep-fry strips in hot oil until golden brown and crisp. Toss in the reserved garam masala before serving.
INGREDIENTS
- 350 grams plain flour, sifted
- ¾ teaspoon chilli powder
- ½ teaspoon ground cumin
- 75 grams ghee, melted
- 1 teaspoon cumin seeds
- ½ teaspoon dried thyme
- 100 ml water
- ½ teaspoon ground ginger
- 2 teaspoon grated lime rind
- 2 teaspoon garam masala (Reserve 1 teaspoon for serving)
- Peanut oil for deep-frying
- Salt, to taste
