DEEP-FRIED OKRA

Preparation Method :

  • Put the okra into a bowl, sprinkle over the water and stir to just moisten.
  • Put the cornmeal, flour, salt and pepper to taste into a bowl and mix. Add the okra slices and tilt till okra is lightly coated.
  • Heat the oil in a deep skillet or pan, when hot add the okra slices in batches.
  • Cook, stirring occasionally, for about 2 minutes or until the okra is bright green and the cornmeal coating is golden yellow.
  • Remove the okra from the oil and drain on paper towels. Cook the remaining okra. Serve hot as a snack.

INGREDIENTS

  • 500 grams fresh okra, trimmed and cut into thick slices
  • 50 grams all-purpose flour
  • 75 ml tablespoon water
  • 75 grams yellow cornmeal
  • Peanut oil, for deep-frying
  • Salt and pepper, to taste
