- Beat the eggs with salt and pepper to taste, the yogurt and snipped chives.
- Arrange the smoked fish on 4 individual plates, leaving a small space in the centre of each one.
- Heat the margarine gently in a pan until melted; add the beaten egg mixture and cook over a low heat until the egg forms soft creamy flakes.
- Spoon into the centre of each plate of smoked fish and top with a little black lumpfish roe.
- Serve immediately, before the lumpfish roe has had a chance to discolor the scrambled egg.
