Preparation Method :
- Add the chicken pieces with half of the oil into a saucepan over medium heat and cook until golden brown on both sides. Remove and set it aside to keep warm.
- Add all the ingredients with remaining oil to a large pan, mix well and sauté until soft.
- Return the chicken pieces to the pan, spoon sauce over and simmer, covered for about 20 - 30 minutes or until the chicken is tender.
- Arrange the chicken in a warm serving dish, drizzle with yogurt and chopped parsley.
INGREDIENTS
- 150 ml natural yogurt
- 75 ml cooking oil
- 725 grams tomatoes, peeled and chopped
- 250 grams chicken pieces
- 1 onion, cut into eighths
- 3 cloves garlic, crushed
- 1 red pepper, seeded and sliced into strips
- 1 yellow or green pepper, seeded and sliced into strips
- 1 tablespoon sweet ground paprika
- 100 ml dry white wine
- Chopped fresh parsley, for garnish
