CHICKEN SATAY WITH CHILI DIPPING SAUCE

Preparation Method :

  • Sweet Chili Sauce: Combine all the ingredients together in a bowl.
  • In a glass bowl, mix together the coconut mixture, garlic, sugar and spices. Add the chicken, coat it with the spice mixture and marinate for at least 20-30 minutes.
  • Thread the chicken onto wooden skewers and cook under a preheated grill for 5 minutes or until cooked, turning occasionally. Serve with the chili sauce.

INGREDIENTS

The Satay

  • 2 tablespoon creamed coconut, dissolved in 50 ml boiling water
  • 2 garlic cloves, crushed
  • 1 tablespoon soft brown sugar
  • ½ teaspoon turmeric
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • 300 grams boneless, skinless chicken breasts, sliced thinly

The Sweet Chili Sauce

  • 2 tablespoons runny honey
  • 2 tablespoons chili sauce
  • 2 tablespoons fresh coriander, chopped
