Preparation Method :

Process garlic, ginger, sauce, juice, sugar, oil, chilli and ground coriander until mixture is smooth.
Cut, scrape and push meat down to large end. Pull skin and meat over end of bone; they will resemble baby drumsticks.
Pour the spicy mixture over chicken pieces in large bowl. Stir in fresh coriander and coconut cream, cover; refrigerate for several hours.
Grill the chicken until well browned and tender; brush with marinade occasionally during cooking.
Place remaining marinade into small saucepan. Blend corn flour with the water, stir into marinade; stir until mixture boils and thickens. Serve as a dipping sauce with chicken.

INGREDIENTS

3 kg chicken wings
2 teaspoon ground coriander
4 cloves garlic, crushed
50 ml lime juice
1 teaspoon chopped fresh ginger
1 tablespoon light soy sauce
2 tablespoons sugar
2 tablespoons IDHAYAM Mantra peanut oil
½ teaspoon chilli powder
2 tablespoon chopped fresh coriander
100 ml coconut cream
1 teaspoon corn flour
Salt, to taste
1 tablespoon water
