Preparation Method :
- Preheat the oven to Gas Mark 6/200°C/400°F.
- Brush each piece of filo with a little of the olive oil, then cut into quarters. Line 4 loose-bottomed flan tins with 4 squares of the pastry each, then brush with the remaining oil.
- Place half of the tomatoes in the bottom of the tarts, cover each with a slice of cheese and then top with the remaining tomatoes.
- Sprinkle over the oregano and season well.
- Cook for 10 minutes or until the pastry is golden and the cheese begins to melt. Serve hot.

- 250 grams cherry tomatoes, halved
- 100 grams cut into 4 slices, firm goat's cheese
- 4 filo pastry sheets, 10 inch squares
- 1 tablespoon olive oil
- 2 teaspoon chopped fresh oregano
- Salt and freshly ground black pepper, to taste
