PAPRIKA AND CRESS BUTTER

Preparation Method :

  • Whisk the butter and divide it into two halves. Mix the cress with one half of the butter. Spice the cress butter with lemon juice, salt and pepper.
  • Mix the diced paprika with the rest of the butter. Spice the paprika butter with salt, cayenne pepper, paprika powder and the sherry.
  • Fill a sufficiently large mould with a layer of cress butter. Let it harden in the fridge and put a layer of paprika butter on top of it.
  • Allow it to cool and continue the procedure until all the butter has been used. Then keep in a cool place until it is used.
  • Cut the paprika and cress butter into thick slices, garnish with herbs and serve.

INGREDIENTS

  • 250 grams butter
  • 2 teaspoon sherry
  • 1 box of cress, washed and dried
  • 2 teaspoon lemon juice
  • 1 red pepper
  • 1 pinch of cayenne pepper
  • Paprika, washed and diced
  • Salt and pepper, to taste
  • Herbs for garnishing
