BASIC MERINGUE

Preparation Method :

  • Whisk the egg whites and cream of tartar in a large bowl until frothy.
  • Add the sugar, a spoon at a time and continue beating until the peaks become stiff - they hold their shape.
  • Make sure not to overbeat. The meringue must be used as soon as possible, before it begins to flatten.

INGREDIENTS

  • 75 grams caster sugar
  • ¼ teaspoons cream of tartar
  • 3 large egg whites
