CHESTNUT, CELERY AND ORANGE SOUP

Preparation Method :

  • Melt the butter in a saucepan and add the onion and celery. Cover and sweat together for about 5 minutes.
  • Add the chestnuts and all the remaining ingredients except the orange juice. Cover and simmer for 30 minutes.
  • Pour into a food processor and blend until smooth. Return to the pan and add the orange juice. Reheat gently and pour into bowls.
  • Add a swirl of cream to each bowl and sprinkle with chopped celery leaves or lovage.  

INGREDIENTS

  • 100 grams butter
  • 2 onions, chopped
  • 6 sticks celery, chopped
  • 500 grams prepared chestnuts
  • 2 inch slithers of orange zest
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon ground ginger
  • 1 liter Vegetable Stock
  • 200 ml orange juice
  • 6 tablespoon double cream
  • chopped celery leaves or lovage, to garnish
