CHESTNUT, CELERY AND ORANGE SOUP

Preparation Method :
- Melt the butter in a saucepan and add the onion and celery. Cover and sweat together for about 5 minutes.
- Add the chestnuts and all the remaining ingredients except the orange juice. Cover and simmer for 30 minutes.
- Pour into a food processor and blend until smooth. Return to the pan and add the orange juice. Reheat gently and pour into bowls.
- Add a swirl of cream to each bowl and sprinkle with chopped celery leaves or lovage.
INGREDIENTS
- 100 grams butter
- 2 onions, chopped
- 6 sticks celery, chopped
- 500 grams prepared chestnuts
- 2 inch slithers of orange zest
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon ground ginger
- 1 liter Vegetable Stock
- 200 ml orange juice
- 6 tablespoon double cream
- chopped celery leaves or lovage, to garnish
