ARTICHOKE SOUP

Preparation Method :

  • Combine Jerusalem artichokes and chicken stock in a saucepan and bring to the boil. Reduce heat to low and simmer until vegetables are tender, about 15 minutes.
  • Puree using a liquidiser or stick blender. Add white pepper and salt. Return soup to a simmer. Ladle hot soup into warmed bowls and drizzle each with oil. Serve at once. 

INGREDIENTS

  • 500 grams artichokes, peeled and coarsely chopped
  • 1 liter low-sodium chicken stock
  • 1 teaspoon white pepper
  • 4 teaspoon Sesame oil
