Preparation Method :
- Combine Jerusalem artichokes and chicken stock in a saucepan and bring to the boil. Reduce heat to low and simmer until vegetables are tender, about 15 minutes.
- Puree using a liquidiser or stick blender. Add white pepper and salt. Return soup to a simmer. Ladle hot soup into warmed bowls and drizzle each with oil. Serve at once.
