TOMATO AND ORANGE SOUP

Preparation Method :

  • Heat the butter in a pan and sauté the rice.
  • When the rice is light brown add the tomatoes, carrot and the stock. Pressure cook for 10-12 minutes.
  • Cool and sieve the puree into a soup pan.
  • Bring the puree to a boil; add the parsley, orange juice, sugar and adjust seasoning. Serve hot.

INGREDIENTS

  • 400 grams tomatoes, chopped
  • 1½ teaspoon butter
  • 1 carrot, chopped
  • 200 ml orange juice
  • 1½ teaspoon rice
  • 200 ml chicken stock
  • 1 sprig parsley  
  • 1 teaspoon sugar
  • Salt and pepper to taste
