Preparation Method :
- Heat the olive oil in a large pan. Add the garlic and spring onions and cook over a medium heat until softened.
- Add in the basil and stock with tomatoes, salt and black pepper to taste. Stir and simmer to low flame for about 3 - 5 minutes.
- Add the bread cubes to the soup and continue to simmer for few minutes. Remove from the heat and cool at room temperature.
- Serve sprinkled with the extra shredded basil and grated Parmesan cheese.

- 3 cups chicken stock
- 2 tablespoon olive oil
- 9 tomatoes, peeled, seeded and diced
- 2 cloves garlic, crushed
- 2 tablespoon chopped spring onions
- 8 fresh basil leaves, shredded
- 4 slices rye or white bread, crusts removed, cut into cubes
- Freshly ground black pepper and Salt, to taste
- Shredded fresh basil and grated Parmesan cheese, for garnish
