Preparation Method :
- Preheat oven to 200°C (400°F).
- Cut tomatoes in half crossways and place in a roasting pan, cut side down. Sprinkle tomatoes with olives, thyme, garlic, 30 grams basil, shallots, fennel seeds, orange zest, orange juice, salt, and pepper.
- Pour oil over them and roast until tomatoes have released their juices and collapsed, 30-40 minutes.
- Remove from oven and puree in a liquidiser or food processer. Strain mixture through a fine-mesh sieve, pressing on solids with back of a large spoon, into a clean saucepan.
- Bring to a simmer over medium- low heat. Add salt and pepper to taste and cook, stirring, to let flavours mingle, about 3 minutes.
- To serve, ladle hot soup into warmed bowls and garnish each with chopped basil.

- 2 kg very ripe red tomatoes
- 150 grams black olives, stoned and chopped
- 2 teaspoon finely chopped fresh thyme
- 4 cloves garlic, finely chopped
- 50 grams fresh basil leaves, plus chopped basil for garnish
- 4 shallots, finely chopped
- 2 teaspoon fennel seeds
- 2 inch strip orange zest
- 2 Tablespoon orange juice
- 100 ml sesame oil
