FRESH TOMATO SOUP

- Heat the oil in a large saucepan and fry the onion and garlic gently.
- Add the tomatoes to the onion with the vegetable stock, basil, salt and pepper to taste.
- Simmer for 10 minutes and, if wished, serve sprinkled with chopped parsley.

- 2 tablespoon Cooking oil
- 2 large onion, peeled and finely chopped
- 4 cloves garlic, peeled and crushed
- 600 grams tomatoes, skinned and chopped
- 500 ml vegetable stock
- 4 basil sprigs, chopped
- Salt
- Freshly ground black pepper
