SPICED SOUP

Preparation Method :
- Place the beef stock, water, tomato juice, onion, thyme, garlic, salt and meat in a pan.
- Add the black peppercorns and cloves, tied in muslin. Bring to the boil, cover and simmer for 40 minutes.
- Add the potatoes and marrow or courgettes. Cover and simmer for 10 minutes. Add the cabbage, carrots, celery and corn.
- Cover and simmer for about 10 minutes or until the meat and vegetables are tender.
- Serve the soup sprinkled with chopped parsley.

- 2 litres beef stock
- 2 litres water
- 500 ml tomato juice
- 4 tablespoons finely chopped onion
- 2 teaspoons crushed thyme leaves
- 2 clove garlic, peeled and crushed
- 2 teaspoon salt
- 500 grams chuck steak, cut into ½ inch cubes
- 1 teaspoon whole black peppercorns
- 8 whole cloves
- 500 grams potatoes, peeled and cut into ½ inch cubes
- 200 grams marrow or courgettes, peeled and cut into half inch cubes
- 300 grams cabbage, coarsely sliced
- 200 grams carrots, scraped and sliced
- 200 grams celery, sliced
- 4 corn-on-the-cobs cut into 1 inch lengths
- Chopped parsley, to garnish
