- Place the mussels and cockles in a pot without water and let them open quickly on the fire (10 min.) Keep the juice from this. Cook the clams in the same way. Put the periwinkles in abundant cold water heavily salted and peppered. Bring to a boil and stop cooking at that point. Dice the leeks, carrots, celery and onions very finely. Peel the tomatoes, remove the seeds and dice the pulp.
- Combine the garlic, coriander, clove, peppercorns and aniseed in a piece of cheesecloth. Tie with a string to make a sachet. Brown the diced vegetables in your pressure cooker in 75 grams butter for 5 min. on a low fire. Add the juice from the cockles and mussels. Add 1½ litres water (or better yet, 1½ litres concentrated fish stock).
- Add the sachet and the saffron (do not salt until the end of the process, and only if necessary). Cook for 10 minutes from the pressure cooker hissing.
- Meanwhile, remove the shells from the shellfish.
- Prepare a bit of butter with anchovies using the remaining 75 grams butter.
- After the soup has cooked, add the shellfish and the diced tomatoes. Heat until it bubbles. Discard the sachet.
- Pour into a tureen and sprinkle with knobs of anchovy butter.

- 150 grams celery
- 200 grams tomatoes
- 50 grams onions
- 150 grams butter

- 1 clove garlic

- Very little cracked aniseed
- Several pistils saffron salt
- 4 filets anchovy
