Preparation Method :
- Put the celery, leeks, watercress and courgettes into a saucepan together with the chicken stock, salt and pepper to taste, garlic and parsley.
- Simmer gently until the vegetables are just tender - about 15 minutes.
- Puree in a blender or food processor until smooth. Cool, and then stir in half the yogurt. Chill in the refrigerator.
- Serve in soup bowls with a little of the remaining yogurt swirled on top of each portion.
- Garnish with chives.

- 2 bunch watercress stalks, trimmed
- 6 courgettes, thinly sliced
- 1 litre chicken stock

- Freshly ground black pepper

- Small bunch of parsley
- 300 ml plain low-fat yogurt
- Snipped chives, to garnish
