Preparation Method :
- Cut the spare ribs into 1 inch pieces.
- Heat the oil in a pan, add the spare ribs and fry for 5 minutes until golden brown.
- Add the ginger, garlic and spring onions and cook for 2 minutes.
- Add the stock and bring to the boil. Cover and simmer for 1 hour or until the meat is tender.
- Add the remaining ingredients and cook for 1 minute.
- Serve hot.

- 800 grams lean pork spare ribs
- 2 tablespoon Cooking oil
- 4 teaspoons shredded root ginger
- 2 clove garlic, peeled and sliced
- 4 spring onions, chopped
- 2 litres beef stock
- 2 teaspoon salt
- 4 tomatoes, skinned and diced
- 500 grams bean-sprouts
