PAYA SOUP

Preparation Method :

  • Add water in a heavy-bottomed pan and bring it to a rapid boil. Add blanched trotters in it. Set aside.
  • Heat the oil in a pressure cooker and add peppercorns, cinnamon and onion and sauté till the onion is translucent.
  • Then add ginger-garlic paste, tomatoes, turmeric powder, green chili paste, cumin and coriander powder and sufficient salt and mix well.
  • Add the blanched trotters and stir until all spices coat the meat.
  • Add sufficient water and salt if required. Cover and pressure cook for about 1 hour until the bones are evenly cooked and turn soft.
  • Transfer into serving bowl and garnish with coriander leaves.
  • Serve hot with Indian bread, dosa or idly.

INGREDIENTS

  • 6 goat trotters, cleaned thoroughly
  • 1 large onion, finely sliced
  • 1 tomato, peeled and grated
  • 1 teaspoon green chili paste
  • 1½ teaspoons ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 10 black peppercorns
  • 2-inch stick cinnamon
  • 2 teaspoons cumin-coriander powder
  • Salt to taste
  • 2 tablespoons IDHAYAM Sesame oil
  • A few sprigs of fresh coriander, finely chopped
