MIXED VEGETABLE SOUP WITH BACON

Preparation Method :
- Heat the oil in a large saucepan. Put in the garlic, onions, leek and the bacon, cook until the onions are soft but not brown.
- Then add all the vegetables except tomatoes and cook for about 10-12 minutes, stirring occasionally.
- Sprinkle the flour and cook for a minute, stirring constantly.
- Add the hot water and the bouillon cube; bring the mixture to a boil, stirring.
- Simmer to low flame, add the tomatoes and adjust the seasoning. Simmer for about 15-20 minutes or until the vegetables are tender.
- Then add the chopped parsley. Serve hot.
INGREDIENTS
- 150 grams bacon steak rashers, rind removed, diced
- 2 tomatoes, peeled, deseeded and chopped
- 2 tablespoon Cooking oil
- ½ broccoli, sliced
- 1 carrot, diced
- 1 white turnip, diced
- 150 grams zucchinis, sliced
- 2 potatoes, peeled, diced
- 2 onions, chopped
- ¼ cabbage, shredded
- 1 litre water
- 2 cloves garlic, crushed or finely chopped
- 1 leek, sliced
- 2 tablespoon flour
- 50 grams parsley, chopped
- 25 grams bouillon cube
- Salt and freshly ground black pepper to taste
