BEEF SOUP WITH SALAD

Preparation Method :
- Soak the rice noodles in hot water for 10 minutes or boil for 2 minutes. Drain.
- Rinse the bean sprouts with cold water and pinch off any straggly roots.
- Slice the spring onions finely. Cut the tomatoes in half lengthwise, and then slice each half.
- Peel and thinly slice the white onions. Slice steak into paper-thin, bite-sized pieces.
- Put a serving of noodles and a handful of bean sprouts in each large soup bowl.
- Place a few slices of beef, tomato and onions in a large ladle: immerse the ladle in boiling stock until the beef is pink-do not overcook.
- Pour contents of ladle over noodles and bean sprouts.
- Add fish sauce, a squeeze of lemon juice, chilies, coriander and mint leaves to individual bowls to taste.

- 2 litres Beef Stock
- Salt to taste
- 375 grams packet dried rice noodles
- 250 grams fresh bean sprouts
- 4 spring onions
- 3 firm ripe tomatoes
- 2 white onions
- 500 grams rump or fillet steak
- Fish sauce
- Lemon wedges
- Fresh red chilies, chopped
- Fresh coriander leaves, chopped
- Fresh mint leaves
