BEAN SOUP WITH SAUSAGE

Preparation Time :
25 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Cut the sausages into small pieces. Heat oil in a large heavy-based pan and add sausage pieces.
  • Cook over medium heat for 5-6 minutes or until golden, stir it regularly.
  • Remove from pan and drain on paper towels.
  • Add leek, garlic, carrot and celery to pan, cook for 3 minutes or until soft, stir it occasionally.
  • Add flour, cook 1 minute by stirring constantly. Add stock cubes; gradually stir in water and wine.
  • Bring to boil; simmer, uncovered, 10 - 12 minutes.
  • Add pasta, beans and chilli to pan. Increase heat; cook 10 minutes or until pasta is tender.
  • Return sausage to pan, add salt and pepper. Serve with chopped fresh parsley.

INGREDIENTS

  • 5 Italian sausages
  • 2 teaspoons Cooking oil
  • 2 medium leeks, sliced
  • 1 clove garlic, crushed
  • 1 large carrot, chopped into small cubes
  • 2 sticks celery, sliced
  • 3 tablespoons plain flour
  • 2 beef stock cubes, crumbled
  • 2½ litres hot water
  • 100 ml white wine
  • 150 grams small shell pasta
  • 450 grams three bean mix, drained
  • 1 teaspoon chopped chilli 
  • Salt and pepper, to taste
