BACON AND PEA SOUP

Preparation Method :
- Peel onion and chop finely.
- Trim rind and excess fat from bacon; chop bacon into small pieces.
- Place bacon, butter, onion and celery in large heavy-based pan. Cook for 5 minutes over low heat, stir it occasionally.
- Add chicken stock and peas; simmer to low flame, cover and cook for 5 minutes. Increase heat and add pasta; cook, uncovered, stir it occasionally for 5 minutes.
- Add chopped parsley and pepper just before serving.

- 1 large onion
- 4 rashers bacon
- 3 tablespoons butter
- 1 stick celery, chopped into small pieces
- 2 litres chicken stock
- 150 grams frozen green peas
- 250 grams risoni
- 2 tablespoons chopped fresh parsley
- Pepper, to taste
