BACON AND PEA SOUP

Serves :

Preparation Time :
20 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Peel onion and chop finely.
  • Trim rind and excess fat from bacon; chop bacon into small pieces.
  • Place bacon, butter, onion and celery in large heavy-based pan. Cook for 5 minutes over low heat, stir it occasionally.
  • Add chicken stock and peas; simmer to low flame, cover and cook for 5 minutes. Increase heat and add pasta; cook, uncovered, stir it occasionally for 5 minutes.
  • Add chopped parsley and pepper just before serving.

INGREDIENTS

  • 1 large onion
  • 4 rashers bacon
  • 3 tablespoons butter
  • 1 stick celery, chopped into small pieces
  • 2 litres chicken stock
  • 150 grams frozen green peas
  • 250 grams risoni
  • 2 tablespoons chopped fresh parsley
  • Pepper, to taste
