WINTER WARMER RED LENTIL SOUP

Preparation Method :

  • Boil the vegetables, garlic, stock, lentils, onion and paprika into a large pan for about 10-12 minutes.
  • Simmer to low flame and cook for another 15 - 20 minutes or until the lentils and vegetables are tender.
  • Allow the soup cool slightly, then puree in small batches in a food processor.
  • Transfer the soup to the pan and heat thoroughly. Adjust Seasoning to taste with pepper.
  • Ladle the soup into warmed bowls and swirl in a tablespoonful of fromage frais. Sprinkle the chives over the soup to garnish and serve immediately.

INGREDIENTS

  • 1 parsnip, diced
  • 1 garlic clove, crushed
  • 1 litre vegetable stock
  • 2 teaspoon paprika
  • 150 grams red lentils
  • 1 red onion, diced
  • 2 large carrots, sliced
  • 1 celery stalk, sliced
  • 75 grams fromage frais
  • Freshly ground black pepper, to taste
  • 1 tablespoon snipped fresh chives, to garnish
