WINTER WARMER RED LENTIL SOUP

Preparation Method :
- Boil the vegetables, garlic, stock, lentils, onion and paprika into a large pan for about 10-12 minutes.
- Simmer to low flame and cook for another 15 - 20 minutes or until the lentils and vegetables are tender.
- Allow the soup cool slightly, then puree in small batches in a food processor.
- Transfer the soup to the pan and heat thoroughly. Adjust Seasoning to taste with pepper.
- Ladle the soup into warmed bowls and swirl in a tablespoonful of fromage frais. Sprinkle the chives over the soup to garnish and serve immediately.

- 1 parsnip, diced
- 1 garlic clove, crushed
- 1 litre vegetable stock
- 2 teaspoon paprika
- 150 grams red lentils
- 1 red onion, diced
- 2 large carrots, sliced
- 1 celery stalk, sliced
- 75 grams fromage frais
- Freshly ground black pepper, to taste
- 1 tablespoon snipped fresh chives, to garnish
