MASOOR DHAL SOUP

Cooking Time :
40 minutes

Preparation Method :

  • Heat the oil in a large pan; add the onions, carrot and the celery and sauté until softened.
  • Add the remaining ingredients, except for the tomatoes and parsley.
  • Bring the mixture to a boil, cover and simmer for about half an hour, stirring occasionally.
  • Then add the tomatoes and cook for another 3-5 minutes.
  • Pour the soup into a warm serving dish, sprinkle the parsley and serve.

INGREDIENTS

  • 750 ml vegetable stock or water
  • 50 ml Cooking oil
  • 150 grams tomatoes, peeled, deseeded, chopped
  • 150 grams lentils (masoor dhal)
  • 1 tablespoon parsley, chopped
  • 2 onions, chopped
  • 1 carrot, chopped
  • 2-3 stalks celery chopped
  • 2 cloves garlic crushed
  • 1 teaspoon cumin, ground
  • Salt and pepper to taste
