CHILLED HERB SOUP

Serves :

Preparation Time :
1 hour 10 minutes (including chilling)

Preparation Method :

  • Place the yogurt, tomato juice, parsley, mint and half the chives and salt and pepper to taste in a blender or food processor fitted with the steel blade.
  • Blend until well combined, and then chill.
  • Peel the cucumber and scoop out the seeds. Chop finely and chill.
  • To serve, divide the cucumber between soup bowls and ladle the chilled soup over. Garnish with the remaining chives and serve with fresh crusty bread and butter.
  • Serve in chilled bowls, garnished with spring onions (scallions).

INGREDIENTS

  • 800 ml plain yogurt 
  • 500 ml tomato juice 
  • 12 parsley sprigs 
  • 12 mint sprigs
  • 4 tablespoon chopped chives
  • Sea salt and freshly ground pepper
  • 1 large cucumber
