BASIL AND ZUCCHINI SOUP

Cooking Time :
20 minutes

Preparation Method :

  • Melt the butter in a saucepan and add the oil, chopped onion and garlic; sauté for few minutes stirring gently.
  • Then add the vegetable stock, sugar, lemon juice and the zucchini. Bring the mixture to a boil.
  • Simmer to low flame, cook uncovered for about 15-20 minutes or until the zucchini is tender.
  • Add the basil and set it aside to cool. Tip into the food processor in batches and process until smooth.
  • Pour it into the pan and heat, adjust seasoning with salt and pepper.
  • Garnish with sour cream, paprika powder and fresh basil leaves, serve hot.

INGREDIENTS

  • 750 ml vegetable stock or water 
  • 150 grams green zucchini, diced 
  • 1 onion, chopped
  • 1 tablespoon butter
  • 1 tablespoon Cooking oil 
  • 4 cloves garlic, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon sugar
  • ½ teaspoon sour cream
  • ½ teaspoon paprika powder
  • 15-20 leaves fresh basil, chopped
  • Salt and pepper to taste
