Preparation Method :
- Melt the butter in a saucepan and add the oil, chopped onion and garlic; sauté for few minutes stirring gently.
- Then add the vegetable stock, sugar, lemon juice and the zucchini. Bring the mixture to a boil.
- Simmer to low flame, cook uncovered for about 15-20 minutes or until the zucchini is tender.
- Add the basil and set it aside to cool. Tip into the food processor in batches and process until smooth.
- Pour it into the pan and heat, adjust seasoning with salt and pepper.
- Garnish with sour cream, paprika powder and fresh basil leaves, serve hot.

- 150 grams green zucchini, diced
- 1 onion, chopped

- 4 cloves garlic, chopped

- ½ teaspoon paprika powder
- 15-20 leaves fresh basil, chopped
- Salt and pepper to taste
