PARSNIP AND APPLE SOUP

Preparation Time :
25 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Heat the oil in a medium saucepan, add in the onion, parsnips, apple and thyme and fry for about 3-5 minutes or until beginning to soften.
  • Add the stock, bring to the boil, cover and cook on low flame for 20 minutes or until the parsnips are tender.
  • Transfer the soup to a food processor and process until smooth. Return to the pan and stir in the crème fraiche.
  • Adjust seasoning, heat through but make sure not to boil and serve.

INGREDIENTS

  • 150 grams parsnips, peeled and chopped
  • 500 ml vegetable stock
  • 75 grams Bramley apple, peeled, cored and chopped
  • 1 teaspoon Cooking oil 
  • 1 onion, chopped
  • 1 teaspoon dried thyme
  • 50 grams half-fat crème fraiche
  • Salt and freshly ground black pepper, to taste
