Heat the butter in a pan, add the chopped onion, and curry mixture and apple and cook, stirring occasionally, for 5 minutes.
Stir in the stock and bring to the boil, then simmer for 5 minutes. Leave to cool, then place in blender and blend until smooth.
Stir in apple juice, cream, lemon juice and salt and pepper to taste. Chill well.
Serve in chilled bowls, garnished with spring onions (scallions).
INGREDIENTS
- 50 grams butter
- 2 small onion, chopped
- 2 tablespoon curry powder, mixed with
- 2 tablespoon sherry
- 2 large dessert apple, peeled, cored and diced
- 600 ml chicken stock
- 250 ml apple juice
- 250 ml single cream
- 2 tablespoon lemon juice
- Salt and freshly ground white pepper
- Chopped spring onions to garnish
