Preparation Method :
- Chop one avocado and puree it with the chicken stock in a blender.
- Peel and stone another avocado brush with lemon juice, wrap in cling film and chill.
- Put the mixture in a large bowl and stir in the remaining lime or lemon juice, cream and adjust seasoning.
- Then cover and chill for an hour. Serve the soup garnished with lemon and avocado slices and chives.
INGREDIENTS
- 2 ripe avocados
- 500 ml chicken stock
- 200 ml cream
- 1 tablespoon lime or lemon juice
- Salt and cayenne pepper to taste
- 1 lemon, cut into thin slices
- 1 tablespoon chives, finely cut
- Few slices of avocado for garnishing
