SPICED PUMPKIN SOUP

Preparation Method :
- Cook pumpkin into a large saucepan with all the ingredients, covered, over a gentle heat for about 15 - 20 minutes. Stirring.
- Add stock or water to pan, bring slowly to the boil and simmer for about 10 minutes or until pumpkin is very tender. Remove pan from heat and set aside.
- Place the soup in a food processor or blender and process until smooth.
- Return soup to clean pan, reheat gently, check for seasoning and serve with a swirl of cream.
INGREDIENTS
- 1 kg pumpkin, peeled and diced
- 2 tomatoes, chopped
- 1 onion, chopped
- 3 tablespoon butter
- 1 teaspoon ground coriander
- ½ teaspoon ground cumin
- 1 litre chicken stock or water
- Freshly ground black pepper, Salt to taste
- Pinch grated nutmeg
- Double cream, for garnish
