GREEN CUCUMBER SOUP

Preparation Method :
- Melt the butter in a large saucepan; add the flour and cook for a minute, stirring constantly.
- Remove from heat and allow it cool.
- Then add the milk, stirring constantly and bring the mixture to a boil.
- Add the cucumber mixture, dill, with the cream. Adjust seasoning and reheat.
- Serve in warm serving bowls, garnished with chives or dill.
INGREDIENTS
- 500 ml chicken stock (de-fattened)
- 2 tablespoon butter
- 100 ml milk
- 2 tablespoon flour
- 2 large dark green cucumbers, Peeled, halved; deseeded, cut into small pieces and puree with little stock.
- 100 ml cream
- 2 teaspoon dill, chopped
- Salt and freshly ground white pepper to taste
- 1 tablespoon fresh chives or dill, snipped for garnish
