CUCUMBER, LEMON AND MINT SOUP

Cucumber, Lemon and Soup is simply prepared and is enriched with its flavourful ingredients like vegetable oil, chicken stock, low-fat yoghurt, mint salt, ground black pepper and mint sprigs! This is perfectly made to satisfy your cravings to different kinds of foods!
Serves :

Preparation Time :
1 hour 10 minutes (including chilling)

Cooking Time :
15 minutes

Preparation Method :

  • Heat the oil in a pan, add the onion and fry gently for 3 minutes.
  • Add the cucumber and fry for a further 5 minutes. Transfer to a bowl and leave to cool.
  • Stir in the yogurt and stock, then the lemon rind and juice, mint and salt and pepper to taste.
  • Chill in the refrigerator for 1 hour. Pour into 4 individual chilled bowls.
  • Garnish with mint sprigs and serve chilled. 

INGREDIENTS

  • 2 tablespoon Cooking oil
  • 2 small onion, peeled and finely chopped
  • 1 cucumber, peeled and cut into ½ inch cubes
  • 750 ml plain low-fat yogurt 
  • 500 ml chicken stock 
  • Finely grated rind and juice of 1 lemon
  • 4 tablespoons chopped mint salt
  • Freshly ground black pepper
  • Mint sprigs, to garnish
