CREAMY CUCUMBER SOUP

Preparation Method :
- Put the diced cucumber stock and onion into a pan.
- Bring to the boil, cover and simmer for 20 minutes or until tender. Cool slightly, then liquidize or sieve until smooth.
- Melt the butter or margarine in another saucepan.
- Stir in the flour and cook for 1 minute. Gradually stir in the cucumber puree and bring to the boil.
- Add the lemon juice then season well with salt and pepper and simmer for 4 to 5 minutes.
- Allow to cool completely then chill.
- Just before serving, stir in the cream and sprinkle with grated cucumber.

- 1 litre chicken stock
- 2 small onion, peeled and chopped
- 30 grams butter or margarine
- 30 grams plain flour
- 2 teaspoon lemon juice
- Salt and pepper
- 4-5 tablespoons single cream coarsely grated cucumber for garnish
