COUNTRY PUMPKIN AND PASTA SOUP

15 minutes

Preparation Method :

  • Peel onion and chop finely.
  • Peel pumpkin and potatoes and chop into small cubes. Heat oil and butter in a large pan.
  • Add onion and garlic and cook, stirring, for 5 minutes over low heat.
  • Add pumpkin, potato and chicken stock. Increase heat, cover pan and cook for 8 minutes or until vegetables are tender.
  • Add pasta and cook, stir it occasionally, for 5 minutes or until pasta is just tender.
  • Serve immediately. Sprinkle with chopped parsley.

INGREDIENTS

  • 1 large onion
  • 750 grams pumpkin
  • 2 medium potatoes
  • 1 tablespoon Cooking oil
  • 2½ tablespoons butter
  • 2 cloves garlic, crushed
  • 3 litres light chicken stock
  • 150 grams risoni
  • 1 tablespoon chopped fresh parsley, for serving
