COUNTRY PUMPKIN AND PASTA SOUP

Preparation Method :
- Peel onion and chop finely.
- Peel pumpkin and potatoes and chop into small cubes. Heat oil and butter in a large pan.
- Add onion and garlic and cook, stirring, for 5 minutes over low heat.
- Add pumpkin, potato and chicken stock. Increase heat, cover pan and cook for 8 minutes or until vegetables are tender.
- Add pasta and cook, stir it occasionally, for 5 minutes or until pasta is just tender.
- Serve immediately. Sprinkle with chopped parsley.

- 1 large onion
- 750 grams pumpkin
- 2 medium potatoes
- 1 tablespoon Cooking oil
- 2½ tablespoons butter
- 2 cloves garlic, crushed
- 3 litres light chicken stock
- 150 grams risoni
- 1 tablespoon chopped fresh parsley, for serving
