Preparation Method :
- Bring stock to the boil. Add the sherry, sesame oil, and salt if necessary.
- Slowly pour the beaten egg into the boiling stock.
- Stir once or twice. Serve immediately.
- Sprinkled with spring onions.

- 2 eggs, beaten
- 1 litre Chicken Stock
- 2 spring onions, finely sliced
- 2 tablespoons dry sherry
- 1 teaspoon sesame oil
- Salt to taste
