CHICKEN DUMPLING SOUP

12 minutes

Preparation Method :

  • Mix together the chicken, spring onions, salt, soy sauce, garlic and ginger. Place small teaspoons of filling on each wonton wrapper.
  • Moisten the edges of the wrapper and fold diagonally over filling to make a triangle, pressing the edges together to seal.
  • Moisten two corners at the base of the triangle and then press them together.
  • Bring stock to the boil in a large pan and add dumplings. Stir until boiling again and then simmer for 10 minutes.
  • Garnish with coriander and serve hot.

INGREDIENTS

  • 250 grams minced chicken
  • 2 spring onions, finely sliced
  • ½ teaspoon salt
  • 1 tablespoon soy sauce
  • 1 clove garlic, crushed
  • ¼ teaspoon finely grated fresh ginger
  • 150 grams  wonton wrappers
  • 2 litres Chicken Stock
  • Chopped fresh coriander to garnish
