VEGETABLE BORTSCH

Preparation Method :
- Heat the oil in a large pan, add the onion and fry until softened, about 5 minutes.
- Add the water, beetroot, carrot, celery, and salt and pepper to taste.
- Bring to the boil, cover and simmer over a low heat for 30 minutes.
- Add the cabbage, garlic and tomato puree, and simmer for 20 minutes.
- Add the lemon juice and parsley, blending well.
- Adjust the seasoning. Pour into individual serving bowls and swirl the yogurt over the top.
- Serve immediately.

- 2 litres water
- 750 grams beetroot, peeled and roughly chopped
- 2 large carrot, scraped and chopped
- 4 celery stalks, trimmed and chopped
- Salt
- Freshly ground black pepper
- 350 grams cabbage, trimmed and shredded
- 4 cloves garlic, peeled and chopped
- 4 tablespoons tomato purees
- 2 tablespoon lemon juice
- 2 tablespoon chopped parsley
- 200 ml plain low-fat yogurt
