POTTED CHEESE

Preparation Method :

  • Place all the ingredients in a blender or food processor fitted with the steel blade and process until smooth.
  • Alternatively, cream the cheese and butter together with a wooden spoon, and gradually work in the flavorings.
  • Spoon into a crockery bowl and store, tightly covered, in the refrigerator, where it will keep for weeks.

INGREDIENTS

  • 500 grams cheese, grated
  • 200 grams butter
  • 12 tablespoons port, sherry, brandy or stout
  • Pinch of pepper or cayenne
  • 2 tablespoon chopped chives or fresh herbs
