TANDOORI PRAWNS

Preparation Method :

  • Add the marinade to the prawns and mix to ensure that they are evenly coated. Marinate in the fridge for about half an hour or until ready to cook.
  • Heat the grill on a medium-high setting.
  • Rub the skewers with a little oil and thread the prawns and pineapple chunks alternately.
  • Cook the prawns under the hot grill for about 5 minutes or until the prawns are cooked and browned. Baste with a little melted butter half way through cooking.
  • Serve hot with lemon or lime wedges as a starter.

INGREDIENTS

  • 250 grams pineapple, cubed
  • Lemon or lime wedges, to finish
  • 12 wooden bamboo skewers soaked in cold water for 30 minutes
  • 2 tablespoon Cooking oil, plus extra for the skewers

Marinade - Ground to Paste

  • 1 tablespoon Greek yogurt
  • 1 inch piece of ginger, grated
  • ¼ teaspoon chilli powder
  • ½ teaspoon ginger
  • 2-3 garlic cloves, crushed
  • A pinch of nutmeg
  • 2 tablespoons butter, melted
  • Freshly ground black pepper and Salt, to taste
  • ½ teaspoon cumin seeds
  • ½ teaspoon garam masala

Prawn with lemon mixture, washed after 15-20 minutes and Pat dried

  • 550 grams raw king prawns, tails left on
  • ½ teaspoon turmeric
  • 2 teaspoons lemon juice
  • Salt, to taste
