STIR-FRIED SCALLOPS WITH SUGAR SNAP PEAS

Preparation Method :
- Heat a wok over medium heat, add the oil and swirl to coat the side. Add the garlic and ginger, and stir-fry for 30 seconds, or until fragrant.
- Add the peas to the wok and cook for 1 minute, then add the scallops and spring onion and cook for 1 minute, or until the spring onion is wilted.
- Stir in the oyster and soy sauces, sesame oil and sugar and heat for 1 minute, or until warmed through. Serve with rice.
INGREDIENTS
- 2 tablespoons cooking oil
- 2 large garlic cloves, crushed
- 3 teaspoons finely chopped fresh ginger
- 300 grams sugar snap peas
- 500 grams scallops, without roe, membrane removed
- 2 spring onions (scallions), cut into 2 cm ( ¾ inch) lengths
- 2½ tablespoons oyster sauce
- 2 teaspoons soy sauce
- ½ teaspoon sesame oil
- 2 teaspoons sugar
