The Quick-Fried Prawns recipe is considered as one of the healthy foods that are now offered in different high class food chains all over the world. This dish can prepare for about one hour and can serve for eight people.

Preparation Method :
- Cook the asparagus in boiling salted water for 5 minutes; drain thoroughly.
- Mix the sherry with the egg white and salt. Add the prawns and toss until evenly coated.
- Heat the oil in a wok or frying pan, add the ginger and half of the spring onions and fry for 2 minutes.
- Add the prawns and cook for 5 minutes, or until they become pink. Add the asparagus and remaining sherry and cook for 1 minute.
- Transfer to a warmed serving dish and sprinkle with the remaining spring onion.
- Serve immediately.

- 8 tablespoons dry sherry
- 2 egg white
- Pinch of salt
- 1 kg peeled prawns, fresh or frozen and thawed
- 2 tablespoon cooking oil
- 2 teaspoon finely chopped root ginger
- 4 spring onions, chopped
