PRAWN AND SNOW AND PEA STIR-FRY

Preparation Method :
- Heat a wok to very hot, add the oil and swirl to coat the side.
- Add the garlic, lemongrass and ginger and stir-fry for 1-2 minutes, or until fragrant.
- Add the prawns and cook for 2-3 minutes, or until pink and cooked.
- Add the snow peas, spring onion, sprouts, rice wine, oyster and soy sauces and toss until heated through and the vegetables start to wilt.
INGREDIENTS
- 1½ tablespoons cooking oil
- 3 garlic cloves, thinly sliced
- 1 lemongrass stem, white part only, finely chopped
- ½ tablespoons thinly sliced fresh ginger
- 1 kg raw medium prawns (shrimp), peeled and deveined, tails intact
- 200 grams snow peas (mangetout), trimmed and cut into 3-4 strips lengthways
- 6 spring onions (scallions), thinly sliced on the diagonal
- 80 grams snow pea (mangetout) sprouts
- 1 tablespoon Chinese rice wine
- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce
