PRAWN PATE

- Blend the prawns with the remaining ingredients until smooth. Transfer to a small saucepan, check the seasoning and stir in the remaining prawns.
- Bring just to the boil. Pour into 4 individual cocottes or 1 large china dish. Smooth the top and place in the refrigerator to chill.
- Garnish with dill or parsley and serve with hot toast.
- Chill for 1 to 2 hours before serving.

- Freshly ground black pepper
- Pinch of ground mace
- Pinch of cayenne
- 1 teaspoon anchovy essence
- 100 grams margarine
- 8 dill or parsley sprigs, to garnish
