PRAWN LAJAWAB

Preparation Method :

  • Heat the oil in a pan, add the mustard and cumin seeds. When they crackle, add the curry leaves, onions and chillies. Fry till the onions turn light brown in colour.
  • Put in the prawns and continue frying, stir continuously for about 2 minutes. Mix in the tomatoes and cook for 3-5 minutes.
  • Adjust seasoning, beat the eggs, till frothy and pour into the prawn mixture, stir fry till fluffy. Serve garnished with coriander leaves.

INGREDIENTS

  • 150 grams Prawns, boiled with a little salt
  • 250 grams Onions finely chopped
  • 2 Tomatoes finely chopped
  • 75 ml Cooking oil
  • 1 teaspoon Urad dhal
  • ½ teaspoon Mustard seeds
  • ½ teaspoon Cumin seeds
  • Few Curry leaves
  • 9-10 Green chillies finely chopped
  • 4 Eggs
  • Pepper and salt to taste
  • Coriander leaves, chopped to garnish
