Preparation Method :
- Heat the oil in a pan, add the mustard and cumin seeds. When they crackle, add the curry leaves, onions and chillies. Fry till the onions turn light brown in colour.
- Put in the prawns and continue frying, stir continuously for about 2 minutes. Mix in the tomatoes and cook for 3-5 minutes.
- Adjust seasoning, beat the eggs, till frothy and pour into the prawn mixture, stir fry till fluffy. Serve garnished with coriander leaves.
INGREDIENTS
- 150 grams Prawns, boiled with a little salt
- 250 grams Onions finely chopped
- 2 Tomatoes finely chopped
- 75 ml Cooking oil
- 1 teaspoon Urad dhal
- ½ teaspoon Mustard seeds
- ½ teaspoon Cumin seeds
- Few Curry leaves
- 9-10 Green chillies finely chopped
- 4 Eggs
- Pepper and salt to taste
- Coriander leaves, chopped to garnish
