CREAMY PRAWNS

Preparation Method :

  • Heat the oil in a heavy-based pan and fry the whole spices for about half a minute. Tip in the prawns and fry for about 2-3 minutes. Remove the prawns with a slotted spoon and set aside.
  • Add the onion paste to the pan and sauté for 5 minutes stirring occasionally. Remove from the heat, mix in the ground spices and the prawns.
  • Adjust seasoning with black pepper and salt. Return to the heat and add half a cup of water, the green chilli and the coconut milk. Cook for a minute or two without boiling.
  • Serve with Basmati Rice.

INGREDIENTS

  • 250 ml coconut milk
  • 50 ml Cooking oil
  • 1 whole green chilli
  • Salt and freshly ground black pepper, to taste
  • Mix the Prawns with turmeric and salt. Set Aside for About 15-20 minutes, Washed and Pat-Dried
  • 750 grams large raw prawns, peeled and de-veined
  • ½ teaspoon turmeric powder
  • A Pinch Of Salt

Whole Spices

  • 1 bay leaf
  • 2 inch cinnamon stick

Ground Spices

  • ½ teaspoon turmeric powder
  • 1 teaspoon chilli powder
  • ½ teaspoon garam masala
  • ½ teaspoon ginger

Onion Paste - Ground to Coarse Paste

  • 1 inch piece of ginger
  • 3-4 garlic cloves
  • 100 grams onion, roughly chopped
