HOT AND SOUR GARLIC FISH

Preparation Method :

  • Heat oil in a wok or pan. Dip the fish pieces in batter and fry on medium heat. Remove on kitchen paper.
  • Heat 3 tablespoon oil in a heavy pan. Add garlic. Saute till it slightly changes colour.
  • Add the broken red chillies. Stir in the tomato puree, tomato sauce, soya sauce, salt and sugar.
  • Add the fish pieces and fish stock. Stir till the sauce coats the fish pieces.
  • Remove on a platter. Garnish with chopped spring onions. Insert a toothpick in each piece and serve hot.

INGREDIENTS

  • Wash and pat dry fish. Marinate the fish in lemon juice and salt for about 20 - 30 minutes. 
  • 500 grams boneless sole fish - cut into 1" cubes 
  • 1 teaspoon lemon juice, little salt to marinate 
  • 1 spring onion - chopped, for garnish
  • Cooking oil for frying
  • Batter
  • Mix all the ingredients of the batter to a smooth batter of coating consistency. 
  • 2 eggs
  • 75 grams tablespoon maida 
  • 2 tablespoon oil or melted butter 
  • Salt and pepper to taste

Sauce

  • 50 ml Cooking oil 
  • 2 tablespoon garlic - crushed and chopped
  • 2 dried chillies - broken into small pieces
  • 75 ml tomato puree, 
  • 50 ml tomato sauce 
  • 1 teaspoon soya sauce
  • A pinch of aji no moto 
  • Salt to taste
