HOT AND SOUR GARLIC FISH

Preparation Method :
- Heat oil in a wok or pan. Dip the fish pieces in batter and fry on medium heat. Remove on kitchen paper.
- Heat 3 tablespoon oil in a heavy pan. Add garlic. Saute till it slightly changes colour.
- Add the broken red chillies. Stir in the tomato puree, tomato sauce, soya sauce, salt and sugar.
- Add the fish pieces and fish stock. Stir till the sauce coats the fish pieces.
- Remove on a platter. Garnish with chopped spring onions. Insert a toothpick in each piece and serve hot.
INGREDIENTS
- Wash and pat dry fish. Marinate the fish in lemon juice and salt for about 20 - 30 minutes.
- 500 grams boneless sole fish - cut into 1" cubes
- 1 teaspoon lemon juice, little salt to marinate
- 1 spring onion - chopped, for garnish
- Cooking oil for frying
- Batter
- Mix all the ingredients of the batter to a smooth batter of coating consistency.
- 2 eggs
- 75 grams tablespoon maida
- 2 tablespoon oil or melted butter
- Salt and pepper to taste
Sauce
- 50 ml Cooking oil
- 2 tablespoon garlic - crushed and chopped
- 2 dried chillies - broken into small pieces
- 75 ml tomato puree,
- 50 ml tomato sauce
- 1 teaspoon soya sauce
- A pinch of aji no moto
- Salt to taste
