FISH WITH MUSHROOM SAUCE
The fish with mushroom sauce is indulged with perfect ingredients like peppercorns, butter, fillets, mushrooms and other flavorings. - Place the bay leaf, onion, peppercorns, salt and water in a large frying pan and bring to the boil.
- Simmer for 5 minutes, then add the fish fillets, cover and remove from the heat.
- Leave to poach for 6 to 8 minutes, then lift out with a slotted spoon and place on a warmed serving dish. Keep hot.
- Saute the mushrooms and spring onion (scallion) in the butter for 3 to 4 minutes, remove from the heat and stir in the parsley.
- Mix the egg yolk with the cream and add to the mushrooms. Return to a low heat and stir until the sauce thickens.
- Add salt and pepper to taste, then spoon over fish.
- Serve with sauté potatoes and green beans.

- 600 ml water
- 8 small fish fillets
- 100 grams mushrooms, finely sliced

- 10 tablespoons single cream
